ive been researching the growth of Psilocybin mushrooms and will start a batch next week. it will be my first time, and im not even sure if it will all go well.^_^
is it better to let them dehydrate, or is it irrelevant?

Oh, and does it matter how much light they get and from what direction it comes from while growing?

You can eat them fresh or dry them for storage. there are several methods of drying them. Try using the search function and choose the method that suits you. I just dry mine out under a fan on some screen material. It only takes a couple of days.

Some say it taste better when they are fresh.

They r a little more potent fresh (psilocin is lost due to oxidization, even tho cubensies dont contain 2 much of it.), so yes, of course they r ok fresh.
For storage, of course u want to dry them.  I dry mine in a dehydrator on the lowest setting (95).
