I've made a note to actually dunk them because this time around I was so anxious/under the influence of alchohol at the moment I had taken it out. I've read about people rolling the cakes in vermiculite afterwords, what purpose does this serve?

i might suggest running down to your nearest cigarette store and getting a cheap analog humidity monitor (about $5) -  they sell them for cigar humidors.  wrap it in a warm wet towel for 15 min and ensure that it goes all the way up to 95%.  that way you'll know if your humidity is where you need it.  also, the local grocery store will have a low-tech refrigerator thermometer.  the two combined with help to let you know if your environment is within fruiting range.
