Can fruiting wait?

I inoculated my jars over a month ago and now half of them are fully colonized and the other half have stopped spreading at 3/4 inoculation.  There doesn't seem to be any sign of invasive organisms in the jars, so I'm just letting them chill.  The problem is that I'll be away from my house for three weeks surrounding Christmas.  I'd rather not enlist a babysitter, so I wonder if there is some technique to encourage the jars to just sit tight for a little while so I can proceed when I return?

Cool temps will slow things down.
