yea it has to be in water. but right now i have the jars in a opened box and the temps in there are 81f/67 rh. so i dont need an incubator right now. should they be in complete darkness? when should i be seeing the 1rst signs of life?

Yes, they should be in complete darkness, but the temp inside the jars are 4 degrees warmer i believe.  You should start seeing growth anytime within the first week.
