Casing Directly in Jars

So I came across a picture in a used bookstore that cased a jar of mycelium while it was still in the jar.  I usually PF Tek with a crumble and case, and this seems like it would lessen time and, more importantly, the risk of contamination (about 10 percent of my cultures get a bad case of green mold, I'm okay with those odds, but if I can avoid it...).  Why do I never see people casing directly in the jar?  I'll probably try half my jars this way, the other half crumbled and cased, but I wanted to see if anyone had any success with this.  Thanks!

casing while your cake is still in a jar kind of takes away from the whole point of casing your cakes.  I wouldn't recommend casing while they are still in the jars you might be disappointed.

Also,
Casing directly in the jars makes it more difficult to harvest.
If one breaks at the stem its difficult to get the remaing piece out which can lead to rot.
And makes aborts even harder as well to get.
