My FC has perlite in the bottom with enough water in it so I can bubble air into it with an air pump. I also have another air pump set up to suck the air (CO2) out. Creating a constant FAE. The humidity is around 91-93%. The cakes and cased grains have been in there for 5 days now. There is some fuzz growing through the verm on the cakes but very little to no change on the cased grains. The last couple times I looked in there the mycelium on the casings had a lot of condensation. It could be that the temp is dropping at night as it is cooling of around here. I noticed the temp around 66f this am. I have raised the babies off of the bottom slightly last night thinking that the bubbler was splashing but the moisture was still there this morning. I have not seen a pin at all. I am getting discouraged. Any advice?

Yeah, my advice is to wait. 5 days is not long at all. If after 2 weeks you still see nothing, then start to worry.

From what I can see in the pic,the 3 trays that are more casing than mycelium look fine.
I'd like to see them a bit closer up because I thought I saw a couple spots that looked like primordia,a.k.a hyphal knots.
But the camera is to far away.

The two behind your temp/ rh gauge also have what appear to be hyphal knots, but those two are looking close to overlay which isn't good.
But I'd like to see closer up of them as well because they look like they may have hyphal knots also.

Trips is right though as the time goes.
Cased grains start fruiting anywhere the 14th - 21st day after cased.
Dunked and rolled cakes can take 3 - 4 weeks to show fruit.

Just try to keep your RH up as much as possible around 93 - 97%(for cased grain)
95 - 100%(for BRF)
Close windows to help warm it up to 70.
One way to help the condensation on your trays is to increase F.A.E,you may also need to readjust you RH.
Make sure you hydrogmeter is working correctly.
Another trick is to use paper towel and very very gently pat the casing
You don't want condensation on it.

I have some pinning on one of the cakes now! I am concerned for the two trays that looked as though they were overlayed. I'm pretty sure they are. After an UH malfunction last night they got soaked. Can you suggest any possible ways to save them?
Thanks!

The overlayed pans have very faint brown patches sort of like cauliflower gets. Are these pans doomed?

In your pics I see hyphal knots in places.
Not sure if the sparkling effect is water, flash from the camera or hyphal knots, but if they are there before the pic and there is no heavy condensation  on the casing then it only leads one to think of hyphal knots.
I rotated and circled spots on your pics to show hyphal knots and what they look like.

2nd pic

The 2nd pic looks worse than the 1st as far as possible overlay.
I suggest you read,
http://www.shroomery.org/5234/What-is-overlay

Here is a good example of overlay.

You can take paper towl and let the paper towl soak up any excess water.
You can also take the trays and tilt them to see if water runs out.
Be sure to wear a sterile glove to keep your hand on the sub so it don't fall out,and then use the paper towl to soak up any exscess on the surface :)

I'm not sure of the "brownish" color.
It looks more like metabolites than contam.
I'd remove the excess moisture on the trays if any,and keep RH around 93% and see how they react for a day or two and adjust accordingly.
Increasing FAE can also help reduce condensation collecting on the casings but try not to let it comprimise the RH.

I have one cake with two open caps. Many are just starting or not open. Can I just pick the open ones or do I have to harvest them all?

Wait till the caps grow and open.

Its usually better for the flushes if you pick them all off at one time including the aborts.
