This definitely sounds like mold.

Those casings are doomed, you can't save them, dunp them as soon as possible.

Are you keeping high humidity and air exchange? How does the casing look, is it overgrown with mycelium? Ideally it shouldn't be.

Yes, and no.  A fruiting chamber doesn't need heating, but it needs air exchange.
The simplest fruiting chamber would be a box covered with a translucent lid or plastic foil. If you lift the lid 1-2 times a day, and mist the casing if on the dry side, you got yourself a fruiting chamber.

As it says at http://www.fungifun.org/English/Casing :

"Give the casing layer a good spray with clean water and cover with a piece of aluminium foil. Put in the incubator or leave at room temperature for 3-7 days. After the day 4 check on the progress by lifting the foil a bit and peeking underneath.  As soon you see first strands of mycelium starting poking through the casing layer take off the aluminium foil, give it a good spray with water and put into your fruiting chamber."

There are no strong odors as long the grow is going well.
The only odors you might encounter are those of bacterial contamination, but even those are subtle and only noticeable  directly near a contaminated jar.

You can eat them raw, of course.
Drying is only necessary if you want them to preserve them for later, fresh they only keep a couple of days in the fridge.

Black(dark purple actually) prints are the spores of the P. cubensis.

You shouldn't shake them so many times.
You should shake them first immediately after inoculation, then when you see app. 10% of the jar colonized, and then perhaps one last time when 50% of the jar is colonized.
