they could be bad, just have to wait and see.  IF there is no growth after the end of the 3rd week you should think about doing them over.  I would just let them sit for now.

You have definitely put alot of thought into this.  One thing that will NOT work is your incubator.  it needs to be opaque not clear, and there is no need to worry about RH or FAE inside of it, only the temperature.  inside the incubator you just want around 75F and no light, none at all, light will hinder growth at this stage.  that's all it requires.  The peroxide thing your talking about with the vermiculite is not needed as well.  when you sterilize your jars everything gets killed.  and for your casing mix with the vermiculite I would suggest using the microwave.  I usually mix peat moss and vermiculite at roughly 50% each, mix to a little over field capacity (to allow for evaporation), cover with saran wrap and microwave for 10 min then shake and then 10 min then shake.  78F is a little high for your FC.  I would suggest lower 70's and remember your FC is what needs 100% RH and good FAE.  You also need some perlite or hydro ton in the bottom of your FC to assist in keeping your RH high.

sounds good.  If you have one in your area feed stores usually have millet or can get it.  I pay 30$ for 50 LB bags of red millet.

That is true, I also believe the debate will continue forever.  Although When I did cakes I never dunked in the fridge, always on the counter with room temp water.  Never had a problem.  But that was just how I did it, everyone finds what works for them.

cubes do not benefit from cold shocking.  they are a tropical species.  cold shocking is for cold climate edible mushrooms.

they quit producing psilocibin after the veil breaks, but they will continue to grow larger.  so they contain the same amount per mushroom regardless.  I personally don't see a difference in how i trip from unopened vs opened.

they look good.  still look a little moist. are you sure they are dry?  if your just going to eat them it doesn't matter if they are dry but if your going to store them they need to be cracker dry.  blue is bruising, they yellow is just from them drying out.  munch them on down, before someone else does.

They wont grow in complete darkness.  light is one of the pinning triggers, and it also tells the mycelium what direction is up.

i would throw it out. no sense in ruining your house for future grows.  those green spores stick to everything.

the bottom holes are right above the trash bag.  at the top edge of the substrate.  all of the holes are above the trash bag.  the carbon dioxide that is produced from growth goes out the bottom holes while fresh air comes in the top holes.

in a nut shell yes.  there are some really good teks for monotubs on http://www.shroomery.org/  you may have to join to see all of them, some are in users journals or just posted on message boards.  best advice is to read a bunch of them, pick one that suits you and follow it to the T for the first time.  also its not sterile, you don't want to sterilize the straw/poo only pasteurize it.  175 degrees F for 2 hours.

chocolate itself can intensify shrooms. the chocolate acts as an MAOI.

yup.  the garbage bag at the bottom isn't absolutely necessary, it just makes clean up easier.  if your holes are the right size,  the water content of such a large substrate keeps your RH up and the holes with polyfill let the air circulate.  you only need to open to harvest.
