Hello,

You picked them at a right time, you could also pick them before the veil opens completely.
Younger mushrooms tend to be more potent.

Sounds like you are doing everything right. Perhaps you got a strain which is difficult to get fruiting?

As long there is no contamination growing(green or black) I would simply give it some more time. Keep the humidity up and give it air exchange a few time s a day.

What do you mean caking? Fruting? from 3 to 5 weeks after inoculation.

3)How much will I be able to harvest?
Depends on the strain, conditions, luck...

The air requirements are fullfilled when you lift the lid/plastic cover of your setup a few  times a day.

Not at all, rust is not a contaminant.

I have experience with similar PC, they will work just fine, of course they are limited space wise, but other than that they work just fine.

Well, the spores of the unknown mushrooms will off course land on your A. bitorquis substrate, but since it is already colonized, nothing bad should happen.
I would be more concerned by green and black molds which could also be in the cellar, those could potentially contaminate and destroy the substrate.

Did you actually try this? The canned corn is salted, can mycelium cope with that?
