I'd like to know, once the inoculation is done, (I'm using jars with metal lids), if I should put some scotch on the holes of the lids or jut leave them opened ?

Either put a layer of aluminum foil loosely over the top, or leave the holes uncovered. Sealing the jar is not good, because mycelium needs air to breath.

Yes, but in the fanaticus article they use tape only and no tinfoil.  Air is everywhere, you can't escape it, unless these jars have some kind of super resistant to air seals, and not even zip lock bags can stop air from coming in.  Also i do think tape would be better for keeping contaminations out to a higher extent.
Not to be over-ruling, but i do think it's a good idea! :D

Maybe even not sealing it as tight as possible would help air exchange when having tape cover the holes, but this could maybe bring contaminations to form easier, i would not know.  There could be other solutions, maybe on my next batch i will test this.

Also where would i be able to find Organic Rye Grains?

You can find organic rye grains in shops that sell organicaly grown foods (kinda obvious ;) ) and on the internet:

ok, now the holes are open, but I put a coffee filter on top of each jar as someone told me.
