A drawer is a bad choice obviously since there is no air exchange. You should dry the mushrooms using a fan, and perhaps end dry them in a desiccant chamber.

In most cases the mold comes ion during the inoculation, or during incubation.
Are you sure the spore syringe is really clean? How are you performing the inoculation? Do you sanitize the needle before inoculation?

Well, the mushrooms could potentially suck up substances from the mold which could be harmful. So to be sure, you would have to dump the mushrooms from contaminated cakes too.

Dump the contaminated ones, keep the healthy ones.

Difficult. You could inject sterile water with a syringe between the gills of the dry mushrooms and suck it up again in the syringe and  get some spores this way. Chances are you will also get some contaminants along too.

A different approach which definitely works is to place a gill on agar, but this is an advanced procedure, see www.shroomery.org/agar

The humidity doesn't depend on the temperature.

A good temperature to fruit would be 74°F or 23°C so room temperature should be ok.

If your substrate is 5 inches? Yes, it is OK, albeit I would rather go with a container with more surface.

Half pints usually colonize faster than larger jars.

Taking the foil away completely would compromise the steility of the jar. Taking the upper layer of foil for a few hous will hardly have any effect, probably none at all.

As long they are not contaminated, either by mold or bacteria, you can leave them, perhaps they will jump to life.

Yes, they look a bit on the wet side, which can also be seen by the fact that at the bottom of the jr there is a wet layer of BRF.

Yes, this is also not good, since in this case it can happen that you either inoculate the cake only on a few points since the spore water doesn't run down the jar's wall, or even worse, you inoculate the dry vermiculite layer which is without nutrients and doesn't support mycelium growth.

With the jars that are showing growth, just leave them grow longer, they will eventually colonize.

And the others, just dump them and for next time you have learned what not to do  which will make your next grow likely to suceed

No gypsum goes into casing.
One uses peat and Calcium carbonate
