Mycelium doesn't "eat" vermiculite but it will grow around it. Everything looks fine to me and seems to be exhibiting some healthy growth recovery from the dunking and rolling. Just be patient and pins will come.

The double tub setup provides a healthy and safe barrier for incubation. You're exposing your jars to a high risk level of contamination at the moment, I would highly advise taking them out of the water ASAP. The double tub incubator is the best discreet incubation method, I would suggest utilizing it.

That "hairy" "greyish" dark color in the center, is cobweb mold. It's always good to remove the section and lightly mist with a h202 solution, it sounds like you could use a some more airflow.

When you're doing cakes like that, you need to have your rh as close to %100 as possible at all times. Since you're using a shotgun FC (with too many holes I might add), don't fan so frequently. That's lowering your rh and by the time it reaches more optimal levels you're coming back to fan it all away again, it's like an endless cycle of never achieving/maintaining your rH.

Suggestion: Get an airstone and water pump. Add more perlite, so you have 3-4 inches in total, then add 1/2 or so of water, submerge airstone under the perlite.

Also, if you lay the cakes on tinfoil squares, spores wont drop all over your perlite and dirty it up.

Are you talking like a New York city backyard, or some place out in the sticks? I guess that would depend on how unnaturally dirty your environment is.

Dunking before flushes is all you have to do to hydrate the cakes, with of coarse the optional rolling in verm as well. Are you misting the cakes directly? they look pretty slimy.

I rinse them until the water is clear. Put it in a pot and fill it up with water an inch or two above the grains, bring to a boil and simmer until you see a noticeable increase in size.

Have you tried crumbling up the contents of the bag to disperse the already colonized grains? I would do that first. Optimum growth is in the low 80's, but that does increase chances of contams if you did not sterilize completely.

Lighting really isn't that important. whether they're exposed to light only for a few seconds a day, or 6+hrs of sunlight or ambient light, it won't make a difference. They just need enough light so they know which direction to grow.

A 1 gallon jug can work fine as long as you keep the humidity up. The amount of time it takes until you start seeing results varies on many different factors, for instance, FAE, rH, and genetics. I've seen some strains pin within a week, some took several weeks. Dunking can force the mycelium to go into a brief recovery mode, however it wouldn't be anything drastic.
