the jars with vermiculite and brown rice stay good with the water in there befor u pressure cook it stay good?

You should PC them soon after making the mix etc. and inoculate soon after cooling. In other words, don't leave them sitting around for very long. The idea is to not let something other than what you want in your jars get a foot hold.

I would say no but you have to be decide wither you think there still sterile... but 2 days is ok :)

I have to agree with moorhS. 2 days isnt a very long time for foreign spores to take a hold of the substrate and will easily be killed duringthe PC'ing. Ive been in the same situation were ive made a load of jars, too many infact, and the it took me a few days to Pc them all [rp[erly but i had zero contaminates so its all cool in the end  :ph34r:
