What substrate and when to transplant outside

Hi,
I live in Seattle where the winters are generally mild and snow-free. I would like to start some azurescens in December, injecting spores into sterile sawdust. Will that work to colonize? I am not averse to using grain or possibly PF Tek either. How long does it generally take to  sufficiently colonize grain or sawdust substrate? I would then inoculate wood chips indoors and transplant them outside soon thereafter, in winter, not spring. In January and February here the temps rarely stay much below freezing for long. Is that OK? My alternative is to keep them a couple months in a closet (I live in an apt) but honestly, the weather in March-April is not that different.

Early spring would be best to transplant outside, but depending on the climate earlier might be possible too.
